Cupeta

Cupeta is a cake made from rice paper, honey and walnuts. Mainly produced in the Autumn, in the past it was made for different saints’ feast days: Saint Lucy in Bormio, Saint Anthony in Morbegno and Sondrio and Saint Agnese in Sondalo.

Ingredients for 8 people

700 g honey
200 g dry biscuits
300 g peeled walnuts
2 sheets of rice paper

Preparation:

Peel and finely chop the walnuts, blitz the dry biscuits to crumbs. Bring the honey to the boil in a pan over a low heat. Mix the walnuts and biscuits and stir them into the honey to give a fairly thick consistency (stir for at least two minutes). Cool and then pour the mixture onto a sheet of rice paper laid on a slab of marble. Cover with the second sheet of rice paper and use a rolling pin to roll out until about 1 cm thick. Cut into pieces.
Tip: it is easier to “peel” the walnuts if you toast them in the oven for about 10 minutes.
